a tiny break from wedding topics.

I love that my fiancé loves it when I bake fresh goodies for him. I love that he appreciates it, and how excited he gets! Like last night, for instance, he came home and proclaimed, “I don’t even want dinner, I’m just going to eat these cookies for dinner.” I know it’s silly, but these silly things he says & does make me fall [in]love with him all over again. He’s always so appreciative, of even the smallest things. It’s great to feel so loved.

Now, back to last night’s cookies, I am by no means a pro baker, but I do love to do it. And chocolate chip cookies are one of the easiest and most delicious things to bake. In my opinion that is. I’ve tried so many different recipes, but I always find myself going back to the recipe on the back of the Nestle Tollhouse bag. I just haven’t found anything better. If you haven’t tried it I highly recommend running out to your local grocery store and grabbing two bags of the 12oz. bags, right now! The reason I say two bags even though the recipe only calls for one 12oz. bag is that I’ve found there is still always those cookies that have barely any choco chips. Those stragglers never get eaten, and I feel so sad for them, they end up leading a very short and unfulfilled life then it’s off to the trash! I am against choco chip cookie cruelty. So my solution is to add 1 ½ bags [18oz.]. Everyone’s happy and no cookies are left behind!

While baking yesterday I found myself increasingly annoyed with my mother’s random and mismatched baking equipment. We do not have an entire set of measuring cups, we have two different ones, with pieces missing, but what’s annoying is that both sets are missing the same pieces, seriously, what is that?! Same goes for our two different sets of measuring spoons with identical missing pieces. And the sets aren’t even duplicate sets, they are so totally different, it’s just thrift store worthy. My mom, the yummy cook she is, is not a baker. So these things just don’t seem important to her and probably haven’t been updated since her own wedding registry.

Out of my annoyance I’ve found myself lusting after the KitchenAid breast cancer line. Measuring cups, spatulas, measuring spoons, mixing bowls, ice cream scoop, they’re all the most delicious shade of bubblegum pink. I so badly want them, and have become a little distraught over the fact that they are not carried at target, nor target.com, which means I cannot add them to my wedding registry. I thought for a moment, “well, I want the pink stand up mixer, so I’ll just delete it off my target registry and register on KitchenAid.com as well.”, but no, impossible. KitchenAid.com does not have a registry option. How can this be? It’s so sad. So I’ve settled for registering for the all white KitchenAid baking set from target.com, a poor second choice, but what other option does a girl have? Especially since I know I won’t be able to convince my fiancé that I need to buy the pink ones myself even though I can register for different colored ones someplace else. The sensible, financially responsible man that he is [and for the most part I completely adore], he’s already expressed that something being pink does not qualify it as a necessity. Darn it.

Back to the point of this post, Chocolate Chip Cookies, I’d love new recipes! If anyone has one they’d like to share. My fiancé has informed me that in his mind, there is nothing better than warm choco chip cookies, or fresh baked brownies. And being as silly [in]love with him as I am, I love to make these things for him fairly regularly. So I’m always trying to top myself and find something better. Plus, trying new recipes is like an exciting new journey! I’m ready, give me a new adventure!
